Limoncello - The Countdown Begins

In the process (because it is a process) of making Limoncello.  

I purchased a bag of Organic lemons from Harry's Market, scrubbed all of the yellow ones (cause there were 2 in the bag that were a bit green still) and used a veggie peeler to remove the zest.

  I put the zest into this large airtight glass canister that I picked up at Target.

  I then poured grain alcohol over the zest....

Now I wait............for something like 40 days..........that will be what...June 7thish
